Recipe: Dump and Dash Slow Cooker Chili

This chili recipe is the standard by which I measure slow cooker recipes:
  • It has to be quick.  
  • It can't dirty another dish or pan.  
  • It can't make me have to plan ahead in any way.  


So yes, this recipe has pretty much ruined all other slow cooker recipes for me.  It asks absolutely nothing of me and it tastes really good.


I've named it, "Dump and Dash Slow Cooker Chili".  That is pretty much the recipe - a super easy Crock Pot Dump Chili.  See all the stuff in the photo below?  Dump that all in.  Turn on the slow cooker and get on with your day. There will be a delicious slow cooker chili waiting for you for suppper!



Most people like a traditional recipe.  So I'll elaborate...

Crock Pot Dump Chili




Part of what makes this recipe so quick and easy is 2 of our prep ahead strategies:


1) Something we call LGB Helper (and it's not an assistant for Lesbian, Gay and Bisexual folks, though I think of that every time and chuckle at our potentially misleading name for this "lean ground beef mix" of ours.):

2) Another thing we call, Homemade Taco Seasoning Mix(That name is pretty clear, no?)

And, now, the recipe!





Dump and Dash Slow Cooker Chili

(Serves 6 to 8)


Ingredients:

Crockpot Dump Chili Ingredients:


  • 1 package LGB Helper (or brown 1/2 lb of lean ground beef with 1/2 an onion, chopped)
  • 1 can Red Kidney Beans, drained and rinsed
  • 1 can Black Beans, drained and rinsed
  • 1 can Crushed Tomatoes
  • 2 Tbsp Homemade Taco Seasoning Mix (or one package of the store-bought variety, low salt)
  • 1 cup Frozen Corn


Steps:

  1. Dump the following into your slow cooker: LGB Helper, kidney beans, black beans, crushed tomatoes, taco seasoning mix.
  2. Cook, on low for 4 to 6 hours.
  3. About 20 minutes before serving, add the frozen corn.
  4. Enjoy!

  1. It's not so much a "recipe" per say, but every once in a while, we like to take whatever veggies are left in the fridge and throw them in the slow cooker. Depending what else we've got in the cupboards, it could end up being chili, pasta sauce, or stew - always tasty though. :)
