I’m so happy that we have an Instant Pot Tortellini Soup recipe now! This is purely selfish and has nothing to do with our blog. I just want to eat it.
Whenever I’m in a restaurant and tortellini soup is on the menu or a Soup of the Day or whatever, I’m getting it. There is something so hearty and comforting about little bundles of pasta wrapped around meat or cheese and floating in – YES – soup, which is itself another comfort food.
This recipe is also my favourite type in that it is broth-based rather than creamy or tomato.
Don’t get me wrong – those are fine options too, but this version is how I prefer my Tortellini Soup.
It isn’t all comfort food fluff either – the chicken, spinach and other veggies back a healthy punch that makes this soup a nutritional winner too.
Now add in the time-saving fact that this tortellini soup cooks in the instant pot and we have even more to love. As with all our easy Instant Pot recipes, our Instant Pot Tortellini Soup is a champ for weekday meals when time is short.
Forgot to defrost the chicken? Don’t worry – this soup cooks it from frozen.
Dicing the veggies is the most hands-on task in the whole recipe, and you can do that ahead of time or – even easier – just use a frozen vegetable mix.
All the other goodness happens with the lid on and you unwinding doing whatever else you need to do.
And while we’re on the topic, you could use some of those newfound minutes to make a baguette with this 5-Minute Bread dough recipe. It will come out of the oven about the same time as the instant pot is depressurizing and the tortellini soup is getting spinach and, you know, tortellini added to it.
Cool the bread while you do the last few steps and it will arrive at the table still warm, so the butter melts when your spread it on. Ladle the soup into bowls when it finishes a few minutes later and you’ll have a complete meal, perfect for cold winter nights (or anytime, really).
