We recently watched the episode of Conan O’Brien Must Go! where Conan and Javier Bardem eat churros dunked in bowls of chocolate. The rest of the episode was a blur because after that scene, we just wanted to book a flight to Madrid.

This is, clearly, a very impractical way to live and/or decide travel destinations, but it doesn’t mean you can’t take that inspiration and run with it in your own kitchen.

We asked ourselves: what if we could take churros dunked in chocolate and make it portable?!

Hence this recipe.

It lets you get the amazing mash-up of Churro and Chocolate flavours and bake it up in your own oven to take with you as needed. What could be better? Nothing, we say!

Actually, we will let you know if any cookies actually avoid being eaten long enough to be taken anywhere. Fresh out of the oven is just too good to resist!

(Ed is also am harboring a secret dream to try air frying them to get that deep-fried churro texture on the outside. He hasn’t gotten brave enough yet to experiment/all the chocolate filled churro cookies are cooked before he thought of it, but if you try this idea first, please comment and let us know how it went!)

Notes:
● You can use a 2 Tablespoon cookie scoop or a large spoon. You want your cookie dough balls to be about 2-3 tablespoons in size, but as long as they fully cover the nutella balls you are good to go.
● The most important thing is to use enough cookie dough to cover each dollop of Nutella. If your Nutella is not completely covered then it will seep out of the cookie as it bakes. This can cause your cookies to spread too much and will create a mess on your baking sheet.
● If you want a little extra warm flavor in your cookies you can add a tablespoon of cinnamon to the cookie dough.
● Make sure you give your cookies a minute to cool down before moving them to a wire cooling rack. The gooey Nutella centers will make these cookies a little unstable straight from the oven, but they will become more stable as they cool.
● You can store these cookies on the counter for up to 5 days. Enjoy them at room temperature or warm 1-2 in the microwave for about 10-15 seconds.
● I recommend leaving at least 2 inches between each cookie to account for spreading. The Nutella will cause these cookies to spread a little bit. We are able to fit 6 cookies on a 9×13 inch baking sheet.

Nutella Stuffed Churros Cookie Recipe

Servings: 1 dozen cookies
Prep Time: 20 minutes
Bake Time: 12 minutes

Ingredients (cookies)

3/4 cup Nutella
1/2 cup salted butter, softened
3/4 cup light brown sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cup all-purpose flour

Ingredients (coating):


1/2 cup white granulated sugar
1 tablespoon ground cinnamon

Preheat oven to 350°F.

Line a baking sheet with parchment paper. Drop spoonfuls of Nutella on the baking sheet and freeze for about 20 minutes.

While your Nutella is in the freezer, prepare the cookie dough.

In a large mixing bowl, combine the softened butter and brown sugar.

Use a mixer to beat the ingredients together until smooth and creamy.

Reduce the speed of your mixer and gently add in the baking soda, baking powder, and flour.
Drop large balls of dough onto a baking sheet.

Flatten each ball into a thick disc and place a frozen ball of Nutella in the middle.

Fold the cookie dough over the Nutella and roll gently back into a ball, ensuring the Nutella is completely covered by cookie dough.

Stir together the granulated sugar and cinnamon in a small bowl.

Roll each cookie in the cinnamon sugar and then return them to the baking sheet.
Bake your cookies for 12 minutes.

Let the cookies cool for a few minutes on the pan and then move them to a wire cooling rack.
