It’s been awhile since we’ve added to our No Knead Refrigerator Bread Dough library, but the wait will be worth it.
Believe it or not, this is actually a (marginally) healthier and less expensive version of another monkey bread recipe we found. (That one used two cans of buttermilk biscuits and almost twice the butter and sugar!)
This Pull Apart Monkey Bread recipe is a delicious dessert (or decadent breakfast treat). It’s dripping with caramel and cinnamon. We took this to a tobogganing party at our friends’ place and it was an enormous hit!
Caramel Pull Apart Monkey Bread Recipe
Monkey Bread Ingredients:
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 6-8 cups (Approximately 1/2 batch) of No Knead Refrigerator Bread Dough
- 3/4 cup brown sugar
- 1/2 cup butter or margarine
- cooking spray
Optional: 1/2 cup walnuts, raisins, or – if you wanted to really go over the top – chocolate chips
Pull Apart Monkey Bread Recipe Instructions:
1. Preheat Oven to 350F.
Grease a large bundt pan with cooking spray. In a large zip-seal bag combine granulated sugar and cinnamon.
2. With a knife, cut the 5-minute dough into 30-50 small pieces.
Spray both the scored dough and your hands liberally with cooking spray.
Begin quickly taking pieces of the cut dough, rolling them into balls and placing them in the sugar-cinnamon bag.
3. After you have about a dozen dough balls in the bag, give it a shake to coat them.
Transfer them to the bundt pan.
Layer in nuts, raisins, etc if desired.
Repeat with remaining dough until Bundt pan is about half full.
4. In a separate, microwave-safe bowl, melt butter or margarine and mix with brown sugar.
Pour evenly over dough pieces in pan.
5. Bake for approximately 30 minutes.
Butter mixture will bubble a lot and may overflow pan.
Dough balls on the top will appear browned.
Cool in the pan for 10-15 minutes then turn out on a serving plate.

Best if served warm, but we had success eating the (minimal) leftovers reheated in the microwave with coffee. Enjoy!
