This spiced apple muffins recipe is terrific for lunches – or snacks, of course!  They have lots of apples – shredded, with the skin on – so they’re quick and easy – no peeling.

Charlotte is back with another of her wonderful recipes.  In case you missed our humble-brag introduction post: our 13 year-old daughter is now a regular contributor to our blog!  We are all having so much fun with this.  She loves sharing her baking and she’s enjoying practising food photography.

This apple spice muffins recipe is terrific for lunches – or snacks, of course!  They have lots of apples – shredded, with the skin on – so they’re quick and easy – no peeling.  There’s a mix of whole wheat and white flours – so there’s some extra fibre and nutrients – but still feel like a treat.

This is one of those surefire packed lunch choices.  We’ve NEVER had one come home uneaten.

So, clearly these muffins are great for lunches – but apologies?  Where does that fit in?

Well, there’s a story there.  It starts with a week long camping trip at a campground with no showers. We had a great week, but we were ready to come home.  We were happily achy from all the swimming and hiking.  We were also a bit greasy from the lack of bathing.  Our beds and showers were calling us home.

Our neighbours have four adult children living at home.  They have a lot of vehicles.  We make sure when we’re away to let them park in our driveway, just to ease the driveway-Jenga they wrestle with daily.  When we pulled up after our four hour drive home one of their cars was in the driveway, so we parked on the street.

“Be sure to grab Indy’s leash before you get out, kids.” I said, because he was wedged into the seat between them – and he was as eager as we were to get out of the car – times a dog factor of 70.  Well…

They didn’t grab his leash.

He bounded out of the vehicle.  He ran around the big tree that blocked our view of the sidewalk.  We didn’t know that Pauline, our legally-blind neighbour was there with her seeing eye dog.  Indy playfully sniffed the seeing eye dog, which she didn’t love, she proceeded to circle around Pauline’s knees.  Her leash wrapped tightly and our elderly, blind neighbour fell and hit the sidewalk.  She was bleeding.

Two hours later I returned from taking Pauline to the Emergency Department.  She needed 5 stitches and she’d have a prize-fighter’s shiner.

I won’t forget the kids’ faces when it was all going down.  There may have been a few tears.  The guilt they felt weighed heavy on their hearts and shoulders.  Charlotte said sorry with words, and with her baking.

These are the muffins she made to express her sorrow at what we’d made happen to our lovely, kind neighbour.  She delivered them later that night and Pauline was delighted.

So, if you ever bloody and bruise your blind neighbour – this is your new go-to recipe.

Spiced Apple Muffins: Healthy and Kid-Approved.

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1/2 cup Canola Oil
  • 1 1/2 cup White Sugar
  • 1 tsp. Vanilla
  • 2 Eggs
  • 1 cup All purpose flour
  • 1 cup Whole wheat flour
  • 2 tsp. Baking soda
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 3 cups Apples, grated with skin
  • 2 Tbsp. Milk

Instructions

  1. Preheat oven to 350F.
  2. Beat oil, sugar and vanilla in a large bowl.
  3. Add eggs and mix until evenly combined.
  4. In a medium bowl, mix flours, baking soda, cinnamon and nutmeg.
  5. Add dry mixture to the wet mixture and combine until evenly mixed.
  6. Gently mix in grated apples and milk.
  7. Add into lined muffin tins.
  8. Bake for 20 minutes.

Oh my goodness. I am so sorry that happened to your neighbor. I can imagine your kids heart ache. It was sweet of your daughter to bake these muffins. No better way to the heart than the stomach.

It was such a trauma for all of us, Michelle. But, Especially Pauline - it was sweet to see how the neighbours all made such a fuss over her afterward. I think in the end she felt more loved and connected to the neighbouehood. I'm sure the muffins helped too. ;)
