This apple spice muffins recipe is terrific for lunches – or snacks, of course! They have lots of apples – shredded, with the skin on – so they’re quick and easy – no peeling. There’s a mix of whole wheat and white flours – so there’s some extra fibre and nutrients – but still feel like a treat.
This is one of those surefire packed lunch choices. We’ve NEVER had one come home uneaten.

Spiced Apple Muffins Ingredients
Yield: 18
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients

- 1/2 cup Canola Oil
- 1 1/2 cup White Sugar
- 1 tsp. Vanilla
- 2 Eggs
- 1 cup All purpose flour
- 1 cup Whole wheat flour
- 2 tsp. Baking soda
- 1 tsp. Cinnamon
- 1/2 tsp. Nutmeg
- 3 cups Apples, grated with skin
- 2 Tbsp. Milk
Instructions

- Preheat oven to 350F.
- Beat oil, sugar and vanilla in a large bowl.
- Add eggs and mix until evenly combined.
- In a medium bowl, mix flours, baking soda, cinnamon and nutmeg.
- Add dry mixture to the wet mixture and combine until evenly mixed.
- Gently mix in grated apples and milk.
- Add into lined muffin tins.
- Bake for 20 minutes.

Oh my goodness. I am so sorry that happened to your neighbor. I can imagine your kids heart ache. It was sweet of your daughter to bake these muffins. No better way to the heart than the stomach.
It was such a trauma for all of us, Michelle. But, Especially Pauline – it was sweet to see how the neighbours all made such a fuss over her afterward. I think in the end she felt more loved and connected to the neighbouehood. I'm sure the muffins helped too. 😉
