Personal Microwave Mug Muffin ~ a delicious & easy blueberry muffin in a jiffy
A quick & delicious breakfast! This microwave mug muffin recipe uses frozen blueberries – but you can use any fruit and yogurt combination.

Last Wednesday was “Take Your Kids to Work Day”. Officially, it’s a day for grade 9 kids to experience the workplace and explore careers.
Unofficially, it’s a day for parents to show off their teen to their coworkers – or seems to be anyway. That’s what I did – I’m so proud of my girlie.
Shortly after I started my year-long leave (to recover from burnout and be creative), my daughter lamented about this upcoming day. “What am I supposed to do on Take Your Kids to Work Day?” she moaned, “Go to MY OWN school with Daddy? Or STAY HOME with you?”
Ed is a teacher at the same high school Charlotte now attends – so that’s super dull and weird. And being at home, she does pretty regularly – snore.
So I cooked up a more exciting plan for her.
The afternoon included visiting my usual workplace and meeting some of the Low German Mennonite from Mexico moms that attend the young family program I normally run. Plus she could see the sort of work I usually do.
The most fun part though was having my co-workers and volunteers fuss over the girl many of them last saw as a baby. #proudmamaforever
In the morning we created and photographed for the blog. So much fun!
Last year around this time Charlotte started contributing some of her recipes here. The girl is a great baker and budding photographer. It’s been a few months since she last shared. She became reluctant to do the work – and I’m a big believer in picking your battles. The mom-daughter relationship takes major priority over the blogger-contributor roles any day, any time.
But I think she might be back into it – we’ll see!
What she would like you to know about her recipe:
- It’s quick to make! It takes about 5 minutes start to finish.
- You can use any fruit. If you keep some fruit in the freezer you will always be ready to make this. Frozen fruit is already cleaned and cut up – so saves you time!
- It’s got fibre to help fill you up – with the whole wheat flour and the berries.
- She’s cut out the extra fat and calories that butter, oil or margarine would give – and you don’t miss it.
- If you have a little tub of yogurt you’ve got enough to mix into the muffin – plus more for a dollop on top.
- You can use any yogurt flavour you like. Mix up your fruit and yogurt for a new muffin every time.
- It makes enough to fill a cappuccino size mug

Vanilla Blueberry Microwave Mug Muffin Recipe
Ingredients
- ½ cup whole wheat flour
- 2 Tbsp brown sugar
- ¼ tsp cinnamon
- ½ tsp baking powder
- 2 Tbsp vanilla yogurt
- ¼ cup milk
- ½ tsp vanilla
- 2 Tbsp blueberries, fresh or frozen (or any fruit of your choice!)

A quick & delicious breakfast! This one uses frozen blueberries – but you can use any fruit and yogurt combination.
Ingredients
- ½ cup whole wheat flour
- 2 Tbsp brown sugar
- ¼ tsp cinnamon
- ½ tsp baking powder
- 2 Tbsp vanilla yogurt
- ¼ cup milk
- ½ tsp vanilla
- 2 Tbsp blueberries, fresh or frozen (or any fruit of your choice!)
Instructions
Mix flour, sugar, cinnamon and baking powder in a large mug
Add yogurt, milk and vanilla. Mix until combined
Sprinkle fruit on top.
Microwave on HIGH for 1 minute and 30 seconds.
Top with yogurt and enjoy!
