Rolled Stuffed Turkey Breast Wrapped in Bacon Weave

The past few years I began a quest to develop a turkey dinner that involves less work, tastes delicious and still had some wow factor for presentation and carving. A big ask! But, I’ve done it. This Rolled Stuffed Turkey Breast Wrapped in Bacon Weave is the result of my mad science.
There are so many reasons to love this bacon wrapped stuffed turkey breast recipe:
- It has breast meat for the roll, but it is wrapped in a bacon weave to keep everything moist and tender. (And you can even toss in a couple drumsticks for people who want a more traditional turkey dinner option.)
- It has cornbread stuffing (The. Best.)
- It looks impressive on the platter,
- It carves beautifully (none of those awkward moments of hacking away at the giant bird)
- Best of all, I think, it tastes better than a regular turkey.

Step 1 is to make a batch of our Skillet Cornbread Stuffing. This can be done a day or two before, if needed.

2. Butterfly turkey breasts in the thickest sections and place between 2 sheets of plastic wrap.
3. Pound into a uniform thickness using a mallet. Remove from plastic wrap and place on the bacon weave, covering all the bacon with turkey.
4. Spoon the cornbread stuffing onto the turkey. Spread evenly.
5. Carefully roll up the turkey with bacon weave around the stuffing. Align the seam under the roll and centre it on the parchment.

Roast at 325F for between 70-90 minutes. A meat thermometer should read 165F when inserted into the centre of the roll.
I cooked a couple drumsticks with ours too – since they cook faster than the thicker turkey roll, check them for doneness after 45 mins and remove when cooked.

If you needed to cook any stuffing separately, consider drizzling the juices over your stuffing dish for added moistness.

- 1-1.5 lbs of bacon
- 6-8 cups of Cornbread stuffing
- 2 large Turkey breasts
Instructions
- On a parchment paper covered baking sheet, weave bacon together. Cover most of the baking sheet with the bacon weave.
- Butterfly turkey breasts in the thickest sections and place between 2 sheets of plastic wrap.
- Pound into a uniform thickness using a mallet. Remove from plastic wrap and place on the bacon weave, covering all the bacon with turkey.
- Spoon the cornbread stuffing onto the turkey. Spread evenly.
- Carefully roll up the turkey with bacon weave around the stuffing. Align the seam under the roll and centre it on the parchment.
- Roast at 325F for 70-90 minutes or until a meat thermometer reads 165F. Remove from oven and allow to sit for 10 minutes before carving.
