Oven baked fajitas

These one-pan chicken fajitas in the oven used to be my go-to recipe.  I’d make it on the days I wanted the happiest family at the table – everyone loves it here! The only reason it’s NOT my go-to recipe anymore?

My daughter claimed it as her own.

Basically, she stole it from me. And I’m pretty happy about that.

At our house, we all take turns making dinner. Our 13-year-old son and 15-year-old daughter each make supper once a week. And Ed and I do the rest (mostly Ed because he shines in the kitchen and loves it).

We all have our go-to recipes – and that’s pretty important to make meal prep sane. I wrote about this essential first step to meal planning before (check that out here – you won’t regret it!)  This recipe is now our daughter’s favourite on her list.

I really miss making this recipe. It’s so simple and we’ve yet to serve it to someone who didn’t love it.

In fact, when I worked as a Community Dietitian I demonstrated it to immigrant moms from Mexico – and they LOVED it.  They were dubious at first – what’s this Canadian lady know about fajitas? Well, one woman came back the next week and told me she had made it THREE times for her family in the past 7 days – her husband and kids raved about it! I think that’s a pretty sound endorsement.

Another great thing about these oven chicken fajitas? You can totally make them ahead and freeze them! Just prep it all to the baking point, pop it in a Ziploc and freeze. Then thaw and bake. So simple.

Chicken Fajitas in Oven

Oven baked chicken fajitas Healthy Ingredients:

Fajita Spices

  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp sugar
  • 1/2 tsp salt

Chicken Fajitas

  • 2 medium onions
  • 4 bell peppers, a variety of colors
  • 1.5 lb. chicken breast
  • 2 Tbsp canola oil
  • 2 medium limes
  • 12 6-inch tortillas

Optional toppings:

Slice the onions, peppers and chicken. 

Place in a large baking dish.

** If you’re making this for the future – this is the point you pop it in a freezer bag and freeze.

Bake at 400F for 35 to 40 minutes. 

Stir halfway through bake time.

Your family will love these baked chicken fajitas - ours does! Easy to make - and can be frozen ahead of time. Delicious!

Ingredients

Fajita Spices

  • 1 Tbsp chili powder
  • 1/2 Tbsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp sugar
  • 1/2 tsp salt

Chicken Fajitas

  • 2 medium onions
  • 4 bell peppers, a variety of colors
  • 1.5 lb. chicken breast
  • 2 Tbsp canola oil
  • 2 medium limes
  • 12 6-inch tortillas

Instructions

  1. Preheat the oven to 400 degrees. 
  2. In a small bowl, mix all of the spices for the fajita seasoning and set aside.
  3. Cut the onion and bell peppers into 1/2-inch wide strips. Put them in a large 13x15-inch casserole dish. Slice the chicken breast into thin strips and add it to the casserole dish with the vegetables.
  4. Drizzle canola oil over the chicken and vegetables. Sprinkle the fajita spice mix over top. Stir the ingredients until everything is well coated in oil and spices.
  5. Bake in the preheated oven for 35-40 minutes, stirring once halfway through. Once out of the oven, squeeze the juice from half of the lime over top of the meat and vegetables.
  6. While the fajitas cook prepare small bowls for the table with the toppings of your choice: lime slices, cilantro sprigs, salsa, sour cream and grated cheese
  7. Bring the casserole dish right to the table, with warmed tortillas so your guests can make their fajitas just the way they like them.

I was hoping this recipe was going to use your Taco Seasoning Packet Recipe. It looks like it has the same ingredients except for sugar. Do you think your seasoning packet recipe could be used?
