Just in case you weren’t sure what you needed next in your life, we are here to tell you it is Baileys Irish cream cake. Technically, Bailey’s Chocolate Cake with Cream Cheese Frosting, but we’re going to guess that even if we omitted those adjectives, you would still have been very fine with the idea of taking the most amazing thing you can add to a cup of coffee and turning that into a dessert menu item.

We are fortunate to have a teenage daughter who loves to bake and invent her own recipes. We’ve shared lots of Charlotte’s Baking Recipes over the years.

When Charlotte started to tinker with this recipe for Baileys chocolate bundt cake, we had never been more excited to be beta-testers for anything. Our friends were very happy to help out too.

With her first go at it, she was new to baking with Baileys (or any alcohol for that matter). She called us to say she thought that the bottle had gone off and that we should pick up another one while we were out driving around.

We did, obviously, as we feel that one should always have Irish Cream on hand, but when we got home, we found that the bottle she was checking out was perfectly fine – she just didn’t know what the alcohol part of Bailey’s should smell like. Ahhh the innocence of youth.

Anyhow, now our house had lots of bottles to bake with, so this recipe is the product of tireless experimentation and cream-alcohol-soaked cake consumption.

Rest assured that we took our jobs seriously, had Charlotte make careful notes and bake multiple cakes so that we could field test them on other booze-cake-minded friends. The end result is near perfect.

Is chocolate cake with cream cheese frosting good?

Yes. Yes, it is. Really, really good.

Bailey’s Chocolate Cake with Cream Cheese Frosting

Prep Time: 20 minutes

Cook Time: 45 minutes

You cant go wrong with this bundt pan.

Baileys Chocolate Bundt Cake Ingredients:

2 cups all-purpose flour

¼  cup cocoa powder

¼ cup hot chocolate powder

¾ tsp baking soda

¾ tsp salt

⅓ cup Bailey’s Irish Cream (for cake batter)

¼ cup Bailey’s Irish Cream (for drizzling in cake while cooling)

1 cup sour cream

1 cup softened unsalted butter

1 ½ cups granulated sugar

3 large eggs

1 tsp vanilla

Bailey’s Cream Cheese Frosting Ingredients:

½ cup softened butter

½ cup cream cheese

1 ½ cups powdered sugar

1 tsp vanilla

Pinch of salt

3 Tbsp Bailey’s Irish Cream

¼ cup hot chocolate powder

Bailey’s Chocolate Cake Directions:

Preheat oven to 350F. Prepare a bundt pan with cooking oil spray.

In a medium bowl, mix flour, cocoa powder, hot chocolate powder, baking soda and salt.

In the bowl of an electric mixer, place butter and sugar.

Beat on Med-High until light and fluffy. (approx. 4 minutes)

To the butter and sugar mixture, add one egg at a time.

Fully mix each egg before adding the next one.

Add vanilla.

Reduce mixing speed to low.

Add ½ flour mixture, mix, then add ⅓ cup Bailey’s and sour cream. Add the rest of the flour mixture and mix.

Spread the batter into the prepared bundt pan. Smooth the top with a spatula.

Bake for 45 to 50 minutes or until a cake tester comes out clean.

While the cake cools and before removing it from the bundt pan, drizzle with ¼ cup of Baileys.

Cream Cheese Frosting Directions:

In a medium bowl, add butter, cream cheese and powdered sugar into a bowl. Whip together.

Next add vanilla, salt, Baileys and hot chocolate powder. Mix well.

When the bundt cake is cool, spread icing over it.

Instructions

    Cake:

    Yes. An icing made of cream cheese is likely to spoil quickly if not refrigerated. It should be left out of the fridge for a maximum of an hour to be safest. We like to keep our cakes in a sealed cake keeper like this affordable and highly reviewed one (our exact one is no longer sold).
