Chocolate Peanut Butter Rice Krispie Treats occupy a special place in the hierarchy of delicious stuff I coveted as a kid (and, I’ll be honest, also as an adult).

On the main level, still-awesome-and-I-love-these-for-dessert would be plain old Rice Krispie Squares.

One tier above that would be Peanut Butter Rice Krispies Treats.

And then, on very rare and incredible occasions I got to eat them, the top level of all rice-cereal-based desserts: Chocolate Peanut Butter Rice Krispie Treats!

Since PB Chocolate Rice Krispie squares basically looked and tasted like a chocolate bar to me, little me assumed that people had to own a Willy Wonka-Style candy factory to make them. I mean, who even has access to Rice Krispies, Marshmallow, Peanut Butter and Chocolate Chips?

And even if you did, what sort of culinary or pastry school would you need to attend in order to learn to combine all of these in such a perfect, harmonious way?

Well, as it turns out pretty much everyone has ready access to all of these ingredients (you likely have most of them in your kitchen/pantry right now) AND they couldn’t be easier or more affordable to make.

Back when our kids were little, Rice Krispie squares were on the list of recipes we would make with them when we wanted them to learn about cooking. It has lots of teachable parts (dry and liquid measuring, mixing, safe stove use), a short-attention-span prep time and it produces a delicious treat when you’re done!

I will give a couple of seconds of lip service here to some non-taste-related virtues of the Chocolate Peanut Butter Rice Krispie treats (I know – this is a stretch and personally I would eat them regardless because they are so amazing, but some folks like the full run down):

  • First – they are made with cereal and while Rice Krispies aren’t the paragon of healthy breakfasts, they are a cereal so they do get fortified with a bunch of nutrients.
  • They are also fat-free (Ummm, Ed, we’re about to add butter/margarine, Peanut Butter and Chocolate to them… – I hear you – but at least they start out fat-free!).
  • Also, we’re adding Peanut Butter and you can control what type you use. So can choose the Peanuts-Only kind and keep more sugar and other fats out or you can choose a non-nut butter if you or someone in your home is allergic, or if your kids’ school has a peanut-free food policy (ours did).
  • And – gluten-free!

At the end of the day, you are making a dessert treat here, so they aren’t going to be healthy food, BUT you can control the ratios and qualities of the ingredients.

There, with that done we can go back to just praising the perfect symphony of Chocolate, Peanut Butter, Marshmallows and Rice Krispies:

Sweet + salty + gooey + texture.

It really is a perfect dessert and if they weren’t so easy to make, you would see them on high-end restaurant menus with exorbinent price tags attached.

  • ¾ cup smooth peanut butter
  • 3 ½ cups mini marshmallows
  • 4 cups Rice Krispies
  • 1 cup semi-sweet chocolate chips

Directions:

In a medium-sized pot, over medium heat, combine the butter, peanut butter, and marshmallows.

Stir the mixture continuously until the butter and marshmallows are completely melted and the mixture is homogenous.
