Despite our pretty consistent meal planning, there’s often a chicken meal that we decide we want to have, but we don’t have chicken defrosted.

So, we resort to these hacks to try and get the bird from concrete to cookable and they all leave something to be desired:

  • Microwave and rotate, microwave and rotate
    • When executed perfectly, with regular flipping and vigilant watching, you might actually have success with this.
    • Us? We end up with chicken that is cooked through and tough in some parts and frozen solid in others.
  • Sealed in plastic, defrost in sink full of warm water
    • This takes longer than the microwave method and has some food safety issues that make Robin cringe.
    • Sometimes successful, sometimes produces chicken that feels defrosted on the outside, but has an icy core and produces an uncooked centre when you try and use it. Like a Cadbury egg, but with botulism.
  • Just chopping it up frozen and cooking as is
    • If you have the knife and upper body strength for this, it isn’t a bad option.
    • Also if that is the case, you might be a Bond villain, so maybe cooking chicken isn’t your big focus.
    • In any event, you still risk chopping fingers off or producing an uneven cook.

Enter the Instant Pot and its ability to cook perfectly from frozen.

This from frozen Instant Pot Lemon Chicken with garlic recipe uses our favourite setting to add flavour: Sauté. It combines some butter and stock to keep things tender and juicy during the pressure cook. Plus it has a savoury-tart mix of seasoning and citrus that make it delicious.

Frozen Chicken Instant Pot Lemon Chicken with Garlic

Lemon Garlic Chicken Instant Pot from Frozen Recipe

Ingredients:

2 Tbsp butter
1/2 Red onion, chopped
2 Chicken thighs
1/2 Tsp garlic powder
1/2 Tsp onion powder
1/2 Tsp Italian seasoning
Salt and pepper to taste
1/2 Cup chicken stock
1 Tbsp lemon juice
2-3 Lemon slices

Directions:

Set the Instant Pot on the sautee setting and melt the butter.

Note: This is A LOT of butter for a more decadent restaurant level meal – we cut this in half for weeknights.

Add the onion and cook until translucent, around 4 minutes.

Add the frozen chicken thighs.

Cook until the skin is golden, around 3 minutes.

Add the seasonings, chicken stock and lemon juice and stir to combine.

Close the lid and valve and set on high pressure for 13 minutes.

Manually release steam.

Open the valve and lid and add the lemon slices.

Stir to combine and let it rest for 5 minutes before serving.

  • 1/2 Red onion, chopped

  • 1/2 cup chicken stock

  • 2-3 Lemon slices

Instructions
