Sheet Pan Lemon Butter Chicken Thighs and Potatoes ~ So Easy & Delicious!
This sheet pan lemon butter chicken thighs and potatoes recipe is another one to add to your repertoire of quick and easy sheet pan dinners that also taste amazing. Add a quick salad and you have a delicious, complete meal in just a few minutes of work!

What’s that? You don’t know what a sheet pan dinner is? Let me give you the welcome tour!
Sheet pan meals take a bunch of great things you would often cook separately, combine them on one baking sheet (saving time, prep, mess etc) and produce a delicious, complete meal that usually looks incredible too. So much to love!
And this one is no exception. The combination of lemon, garlic, butter and chicken together is a savoury, rich, sour and umami team-up that helps elevate the humble potato wedges while it’s at it. The flavours do all the heavy lifting and you sit back and take the credit.
The herbs add depth and the oil and lemon juice cook with the chicken into a sauce keeping the whole dish tender and moist.
While this sheet-pan lemon butter meal uses chicken thighs, you can easily substitute drumsticks or chicken breasts if that is what you have on hand. Try and get bone-in, skin-on breasts if you do, to help keep them moist and flavourful while baking.
More upside – shop for whatever is on sale and make this dish even more affordable.

Serve this with a salad, some mixed veggies or other colourful side dish for a complete meal with great visual and texture contrast on the plate.
Store any leftovers (if there are any) in the fridge for up to a week or freeze for up to a month.
Reheat in a microwave on medium, stirring occasionally for even heating and to check to make sure you aren’t overcooking the chicken. Now you’ve got lunch at work solved too! All you do is win.
Tender, juicy and lemony, this weeknight dinner is easy to put together for the whole family. If you enjoy this baked chicken and potato wedges in a lemon, butter and herbs sauce, be sure and check out all the other sheet pan recipes in the link below.
