Cook. Cook at 350 degrees in your oven for an hour and a half or until the sweet potatoes are easily pierced with a fork.

I suggest using a 6-8-quart crockpot or bigger for these crock pot mashed sweet potatoes. Anything smaller won’t fit all of the sweet potatoes plus added ingredients once cooked.

My sweet potatoes turned brown – what do I do?

Sometimes when sweet potatoes cook, they react to their own acids and start to turn brown. It’s totally edible and not ruined, but it’s certainly not as appealing and can sometimes add a slightly bitter taste. Keep some lemon juice on hand and if you happen to notice your sweet potatoes turning brown after they have started cooking, go ahead and give them a nice squeeze of lemon juice and a quick stir. That should take care of the issue.
