This Thai-inspired chopped chicken salad fits right into a favourite niche in our household: Salads that can both be an amazing side or stand alone as a main course. For a salad to pull this off, it needs to pack protein, different flavours and textures and have a heartiness that makes even veggie skeptics go back for seconds.   • 1 large carrot, shredded (4.02 oz | 120 g)
  • 1 medium cucumber, thinly sliced (10.58 oz | 300 g)
  • 2 cups cooked shredded chicken breast (9.52 oz | 270 g)
  • 4 cups chopped bok choy (9.87 oz | 280 g)
  • 1 red bell pepper, diced (5.07 oz | 144 g)
  • ¼ cup cashew nuts (1.12 oz | 32 g)

Peanut Dressing

  • ¼ cup soy sauce (2.02 fluid oz | 60 ml)
  • ¼ cup peanut butter (2.57 oz | 73 g)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon minced ginger
  • ¼ cup water (2.02 fluid oz | 60 ml)

Instructions

Salad: Add all salad ingredients in a bowl.

Peanut Dressing: Combine all dressing ingredients in a small bowl.
