Most grocery stores sell hot rotisserie chicken at a loss. This means they may actually LOSE money on the chicken you buy there (to lure you into the store and buy other things with bigger profit margins).
Their loss is your gain! When the price is right, we often have purchased two rotisserie chickens at once, knowing that one sometimes isn’t enough. Almost always there would be leftovers (which, don’t get me wrong, we are 100% here for and love as they are).
But sometimes you want more variety out of life than reheated chicken sandwiches.

If you are looking for recipe ideas to use up leftover BBQ chicken, buckle up! Are we overhyping this list? Yes, probably! But we’ve got everything from humble casseroles to soups, salads (yeah, you heard me – salads) to Tex-Mex. And of course, leftover rotisserie sandwich ideas to shake up whatever you are already doing. Can you blame us for getting so stoked?
The only question you are left with is: where to start?
For our money, the real question is: What mood are you currently in?
If it is cold and rainy out and you want to just stay in with some comfort food, the Chicken Parm Casserole or the Chicken Gnocchi soup just might fit the bill.

For our money, the one calling our name right now is the baked chicken chimichangas. Firstly, lets just get this out there: Baked Chicken Chimichanga is just super fun to say. Stop reading right now and try saying it. People on the bus/near your cubicle/ waiting in line with you for coffee will totally agree. Super Fun. And you are a more fun person for making it too. Second, the idea of not only using up leftovers in a delicious new dish, but also baking it in the oven just really appeals to us from a ‘relaxed, greatest hits dinner night‘ point of view.
So that is the sneak preview, but the main attraction starts right now. Get your scrolling finger warmed up and prepare to add a bunch of great ideas to your backup menu plan.
Leftovers get a really bad rap, but when they are as good as these options and the main ingredient is as tasty as leftover BBQ chicken, there is a lot to love here.
