This quick and simple recipe is an entire meal of tender roast with potatoes and carrots and onions. Sure to be a family favourite at your house too!

Tougher cuts like rump roast used to intimidate me; there is a pretty small margin for error around planning. If you misjudge and don’t get it on cooking soon enough, your meal is messed up. You either have to add a lot more cook time – while everyone paces around like hungry lions (or housecats for that matter) at feeding time OR you plate it up as-is, give everyone your sharpest knives and encourage them to ‘slice it thin and take small bites’.

Oh yes! This is where an Instant Pot pressure cooker really shines. It almost magically takes tough cuts of meats and makes them moist and tender.

Instant Pot Rump Roast Recipe Ingredients

  • 2.5 lbs. rump roast
  • 1.5 lbs. potatoes (I used yellow potatoes)
  • 2 large carrots
  • 1 medium/large yellow onion
  • 2 cups beef broth
  • 3 garlic cloves (minced)
  • 2 tbsp vegetable oil (I used canola oil)
  • 1 tbsp red wine vinegar
  • ½ tsp paprika powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt, or to taste
  • ½ tsp black crusher pepper, or to taste

Start by prepping your produce.

Peel and dice your potatoes and carrots.

Peel and quarter your onion.

Peel and mince your garlic.

Turn on the high sauté setting on your instant pot and add your vegetable oil to the pot.

Let it get hot for about a minute.

Season your meat with salt and sauté for about 3-5 minutes on all sides (I had a large block and sauteed on 4 sides).
Once sauteed, add your spices.

Add potatoes, carrots, onions.

Add minced garlic. (Fresh is best but garlic in a jar works in a pinch.)

Then add your red wine vinegar.

Add beef broth to the pot.

Mix all ingredients together.

Set your instant pot to high pressure and cook for one hour. Make sure the vent is sealed.

When the timer goes off, make sure you release the pressure naturally for about 15 minutes.

Remove your meat and shred or cut to the preferred size. Add back to the pot to let it soak up the juices.
