This Ricotta Cheese Quiche combines our favourite things: easy to make, yet impressive dishes and meals that both taste good and pack a nutritious punch into something amazing.

It could easily be the star of your next weekend brunch (or any other meal for that matter). The combination of spinach, eggs and ricotta is a bit evocative of spanakopita (another favourite around here), so we may be a little extra hyped to share it today.

This quiche with spinach and ricotta recipe is already a pretty straightforward dish. Like our crustless quiche or a frittata (seriously, we don’t have a frittata recipe shared? What the what?) this dish is an easy way to get both nutritious vegetables and high protein eggs together in a single, delicious meal.

The cheat code on this one is the use of premade puff pastry to jumpstart the crust as well as give you a rich, flaky base to hold the rest of the ingredients together. Is it a little more indulgent? Abso-freakin’-lutey! But… Vegetables! Eggs! It all balances out.

  • 1 cup ricotta cheese
  • ½ cup parmesan
  • 2 1/2 Tbsp unsalted butter
  • 1 lb fresh spinach
  • 1 garlic clove
  • 1 1/2 tsp poppy seeds
  • 1 tsp salt or to taste
  • Black pepper to taste

Directions:

Preheat oven to 380 degrees F.
