Honey Glazed Sheet Pan Salmon and Veggies Meal (Fast Prep, Healthy, Delicious and Beautiful!)

Okay, before we get to this outstanding sheet pan recipe, I want to digress a bit.

We need to talk for a second about the big selling point that seems to always get overlooked about sheet pan meals in general.
No, I’m not talking about how they are typically pretty easy to prep – in the case of this one you can have it in the oven in 15-20 minutes and on the table after another 20.
I’m also not talking about the other aspect that everyone raves about: Fewer dishes! Fast Clean up!
These points are both very true, as much for this one pan salmon and veggies meal as for any of the sheet pan recipes we have in our popular healthy sheet pan dinner recipe collection. No dispute – we love that they go together quickly and clean up just as fast. Five stars! Will make again!
But that’s not what I’m here to celebrate.
The thing we all seem to overlook while we’re raving about the short prep time and minimal dirty dishes: Sheet Pan meals LOOK AMAZING!
Back when we were testing one of these recipes, Robin fired off a photo of a prepped pan, about to go into the oven. It was just a quick shot – it isn’t on the blog or social media or anything – but more like a, “Hey – looks what’s for supper”. I assumed at the time that it was a carefully staged, well-lit photo that she intended for publication; it just looked so good.
Now, every time I’m about to put one in the oven, I think about that photo.
These meals are almost always both delicious to eat AND gorgeous to look at.
Let’s stop selling them short. This recipe for sheet pan salmon and green beans is no exception. Fast, simple and easy on the eyes.

While I’m at it, let’s add one more plus: HEALTHY.
We know that we should be trying to get more fish into our diets. It can be intimidating to cook, though. You don’t want it undercooked for sure – but you also can easily overcook and dry it out too.
Enter our friend the sheet pan which allows for baked salmon and veggies – the steam from the latter helping to both cook and keep moist the salmon filets.

And the sweet and spicy salmon glaze pairs perfectly with green beans, sweet potatoes, and cauliflower. All ingredients win from this combination. Oh, and you win too. You get to eat them!

Honey Glazed Sheet Pan Salmon and Veggies

Ingredients

4 5-6oz/140-170g salmon filets (skin on, scales removed)
2 large/600g sweet potatoes
1 medium head/400g cauliflower
¾ lb/350g green beans (Choose a Large variety like blue lake: small haricot verts will cook too fast and be soggy.)
2 tbsp/30ml olive oil
Honey Glaze:
4 tbsp/60ml honey
2 tbsp/30ml apple cider vinegar
1 tbsp/15ml Dijon mustard
¼ – ½ tsp/1g cayenne (You can adjust the cayenne to taste: it should be just a hint of spice in the tangy sweet sauce, not overpowering)
¼ tsp/ ½g ground nutmeg
1 ½ tsp/9g salt, divided
½ tsp/1g ground black pepper
Directions
Preheat oven to 400°F/200 C. Line a baking sheet with parchment paper or foil.
Pat the salmon filets dry.



Leave them to marinate while you prep the vegetables.

Slice into long sticks no more than ¼” x ½” thick (6mm x 12mm).
Scatter on the baking sheet.
Remove the cauliflower stem and cut into small florets (no more than 1 ½”/3.5cm wide).
Add to the baking sheet.
Wash and trim the ends of the green beans. Set aside.

Toss to coat and arrange into an even layer on the baking sheet.
Sweet potatoes should be mostly the lowest layer – in contact with the baking sheet.

Brush the left-over glaze on top to get a nice thick coat.

Sprinkle ½ tsp/3g salt on the vegetables.

Ingredients
- Four 5 oz (140-170g) salmon filets (skin on, scales removed) (Larger filets are better to get even cooking with the vegetables.)
- 2 large (600g) sweet potatoes
- 1 medium head (400g) cauliflower
- ¾ lb (350g) green beans (Choose a Large variety like blue lake: small haricot verts will cook too fast and be soggy.)
- 2 Tbsp (30mL) olive oil
Honey Glaze
- 4 Tbsp (60mL) honey
- 2 Tbsp (30mL) apple cider vinegar
- 1 Tbsp (15mL) Dijon mustard
- ¼ – ½ tsp (1 g) cayenne (You can adjust the cayenne to taste: it should be just a hint of spice)
- ¼ tsp (½g) ground nutmeg
- 1 ½ tsp (9g) salt, divided
- ½ tsp (1g) ground black pepper
Instructions
- Preheat oven to 400°F/200 C. Line a baking sheet with parchment paper or foil.
- Pat dry the salmon filets.
- In a medium bowl whisk together the glaze ingredients: honey, vinegar, mustard, cayenne, nutmeg, black pepper, and 1 tsp/6g salt.
- When smooth, add the salmon filets, rotating so the glaze covers all surfaces. Leave them to marinate while you prep the vegetables.
- Wash and scrub the sweet potatoes, leaving the skin on. Slice into long sticks no more than ¼” x ½” thick (6mm x 12mm). Scatter on the baking sheet.
- Remove the cauliflower stem and cut into small florets (no more than 1 ½”/3.5cm wide). Add to the baking sheet
- Wash and trim the ends of the green beans. Set aside.
- Drizzle olive oil on the sweet potatoes and cauliflower. Toss to coat and arrange into an even layer on the baking sheet. Sweet potatoes should be mostly the lowest layer – in contact with the baking sheet.
- Lay the salmon filets on top of the vegetables. Brush the left-over glaze on top to get a nice thick coat.
- Scatter the prepped green beans around the salmon, on top of the other vegetables. Sprinkle ½ tsp/3g salt on the vegetables.
- Bake for 20-25 minutes, until the sweet potatoes can be pierced with a fork and the salmon is cooked through and flaky.
- Serve immediately.
