I’ll confess: while Robin has been a vocal sheet pan dinner advocate for years, I’m late to the sheet pan meal party. She often makes meals from our best healthy sheet pan dinners collection, but these genius meals were never part of my cooking repertoire. Even when she taught the kids and they make our favourite One-Pan Chicken Fajitas in Oven at least twice a month, I had never made a sheet pan meal myself.

And now I wonder why!

This One Pan Healthy Sausage and Veggies dinner will make you a convert too. It’s simple to make and tastes absolutely delicious.

After our first time making it, we were sold – mostly because the kids found things to love in it- but also because it can take stretch about four sausages into a meal that feeds a family (with teenagers!) and still has leftovers. I don’t know about you, but personally, I can devour a couple of sausages on my own if we’re just grilling them up and serving on rolls.

And that’s where we get the ‘Healthy‘, in our Healthy Sheet Pan Sausage and Veggies name. When you can use less meat and still get a hearty, complete meal that doesn’t leave anyone feeling shortchanged, you get a diet – and a budget – win.

Plus you’ll get to use all those root veggies that you have and aren’t sure what to do with: beets, parsnips, sweet potato – they all go from ho-hum sides to co-stars in this spectacular oven-roasted medley

Preparation is very easy. It involves some chopping and cubing, but once that is done, it basically cooks untouched save a simple stir and sausage slice midway through. I’ll take a meal anytime that is front-end prep busy but pays time dividends later when I can walk away from the kitchen for 20-30 minutes while it cooks.

In addition to being easy, this sausage and veggies sheet pan meal is also really flexible.

Pick whatever sausage you want:

  • Vegan sausage,
  • Turkey sausage,
  • Brats for Octoberfest,
  • Spicy Italian or
  • Chorizo if you want to kick it up –
  • I’ve even used precooked-but-still-frozen smokies and it turned out great.

Missing one of the veggies on our list? Tag team in some plain spuds or peeled squash and get a one pan sausage with veggies and potatoes – sure to please a crowd.

Healthy Sheet Pan Sausage and Veggies Ingredients

  • 1-2 parsnips
  • 1-2 beets
  • 2-3 carrots
  • 1-2 apples
  • 1 medium-large cooking onion
  • 1 medium sweet potato
  • 4-5 sausages (can be frozen or thawed)
  • 2 Tbsp Olive or Canola Oil
  • 1 tsp garlic powder
  • 1 tsp dry basil
  • ½ tsp dry rosemary
  • ½ tsp coarse salt

Supplies

One Pan Healthy Sausage and Veggies Instructions:

Preheat the oven to 400F.

Line a 17X13 (or larger if you have it) baking sheet with parchment paper.

Wash and scrub your veggies.

Dice into ½-¾ inch pieces.

Spread over the baking sheet.

Core the apple. Peel the onion and the sweet potato.

Dice them as you did the other veggies above and spread over baking sheet as well.

Your baking sheet is likely getting very full.

Drizzle oil evenly over veggies & add seasonings.

Fit 4-5 sausages into the gaps between veggies (they can sit on top of them a bit if needed).

Transfer sheet to oven and bake for 25 minutes.

Remove baking sheet from oven and transfer sausages to a meat cutting board.

Diagonally cut sausages at a 45-degree angle into ½ inch pieces.

Return the sausage pieces to the baking sheet and mix/stir all the veggies and sausages. Return baking sheet to oven for 15-20 mins.

Remove baking sheet and stir sausages and veggies again.

Check the larger chunks of sweet potato or beet for doneness. You may be ready to plate at this stage, but we usually find that everything benefits from another 5-10 minutes in the oven for a final browning.

So simple make and easy to love! This one pan healthy sausage and veggies recipe is roasted to perfection - and kid-friendly. It’s colorful and delicious. You can make this healthy sheet pan meal to serve as a stand-alone meal or a side dish. Make with brats or any sausage you like - even vegan sausage!

Ingredients

  • 1-2 parsnips
