  • Alternatively, you can heat the cream until hot (but not boiling), and pour over the chopped chocolate.
  • As you roll the bars, the warmth from your hands may make the chocolate melt. You can use an ice pack to cool your hands down if needed.

  • ½ cup heavy cream
  • 1 tablespoon corn syrup
  • 1 tablespoon butter, softened
  • 1 teaspoon vanilla extract

You don’t need an official double boiler. Simply use a glass or metal bowl over a small or medium pot.

Using a double broiler, combine the chocolate, heavy cream, corn syrup and butter.

Continue stirring over medium-low heat until the chocolate is melted and smooth.

Remove from the heat and add the vanilla extract.

If you are using our recipe for this, we would suggest chilling the truffles again after rolling them into balls. 20-30 minutes back in the refrigerator while you melt the coating chocolate in a double boiler.

Once it is ready, take your re-chilled truffles out of the fridge and use a fork or a toothpick to dip them one at a time in the melted chocolate. Carefully remove once coated to a parchment paper covered cookie sheet and return to the refrigerator to cool/harden
