Ultra-easy & Delicious Slow Cooker Honey Garlic Chicken and Veggies Meal (a Dump and Dash Recipe!)

This slow cooker honey garlic chicken and veggies recipe is the ultimate easy, one-pot crockpot meal!  Seriously – get this recipe on your meal plan rotation pronto.

There are so many reasons to love this easy honey garlic slow cooker chicken meal:

  • It is kid-pleasing – our kids practically cheer when they know this is for dinner – it tastes that good. 
  • It’s got healthy, wholesome ingredients.
  • Plus, it COULD NOT BE EASIER.  (It rivals my Dump and Dash Chili for speed.)

It takes less than 10 minutes to prepare – probably closer to five!  (Use my time-saving hack for making the honey garlic sauce to cut down on measuring and dishes…)

Ultra-easy Slow Cooker Honey Garlic Chicken and Veggies Meal

Ingredients:  

12 boneless, skinless chicken thighs

2 onions, chopped

1.5 lb (one bag) baby potatoes

1 lb (one bag) baby carrots    

Honey Garlic Sauce:

¼ cup honey
¼ cup soy sauce
¼ cup ketchup
3 cloves garlic, minced (or 3 tsps prepared chopped garlic)
1 tsp dried basil
½ tsp dried oregano
¼ tsp crushed red pepper flakes
Salt and pepper to taste  

Steps:

1. In a measuring cup, combine soy sauce, honey, ketchup, garlic and spices. (Time-saving Hack: mixing your sauce right into your measuring cup means fewer dishes.  No dirty bowl or extra measuring cups = less work for you!)

2. In a slow cooker layer the rest of the ingredients IN THE FOLLOWING ORDER: (The order is important – if you start with the chicken thighs they will stew in the sauce and when you go to serve them they’ll fall apart and look generally unappealing.  DON’T STIR.)

a. Onions and Carrots 

  c. Potatoes 

  d. Chicken thighs    

3. Pour sauce over the chicken.  (Again, don’t stir – this will keep the chicken intact vs. falling apart.) 

4. Cook on HIGH for 3 hours or LOW for 7-8 hours.  Check that chicken is cooked through and vegetables are soft.

5. Enjoy!

Ingredients
