I know I’ve mentioned this before on the blog, but I love cookies.
And I know some of you will think, “Yeah, yeah, who doesn’t? Cookies are great, whatever”. I mean I love love cookies. Like, Robin used to have to hide the chocolate chips somewhere so that only the designated household bakers, with self-control around cookie ingredients, could access them.
I’ve gotten my general cookie-baking/eating addiction under control, but I still can’t resist stuffed cookies. I am unable to leave a bakery empty-handed when they have them on display.
I have a PhD thesis on why cookies are the perfect dessert (pre-portioned, amazing variety, the perfect mix of soft/tender and firm outside, I could go on), but Stuffed Cookies really take this to the next level.
You see, for me, cookies (like most foods) shine when they have a variety of textures. While standard chocolate chip cookies do an amazing job of this, when you stuff them with, say, a peanut butter cup, you get an additional layer (or layers) of texture and taste that elevate this humble, simple dessert to a showstopper.
So where do you start? For me, the caramel stuffed chocolate cookies below seem like a good spot. A simple, classic outside, melted, gooey caramel inside. Dunked in milk… I rest my case.

Where are stuffed cookies from?
Stuffed cookies most likely evolved from rolled and filled cookies and sandwich cookies, which have been made in many countries for almost as long as cookies have been around.
Stuffed cookies are differentiated from these in that the outside cookie completely covers the inside stuffing and is baked around it, rather than having the filling added later or enrobed to cover it as with most rolled or sandwich cookies.
What is a double stuffed cookie?
Typically, Double Stuffed refers to sandwich cookies (like Oreos) where twice the usual amount of icing has been used to fill or ‘stuff’ the cookie.
Now, if you use a Double Stuffed Oreo in one of these Stuffed Cookie recipes, can it mathematically be called a quadruple stuffed cookie? This is an arms race I want to be a part of!
What makes cookies chewy vs hard?
A variety of factors – fat content, baking time, how long since they have been cooked – all contribute to making a cookie more or less chewy.
We typically try to aim for the lower cooking time in any given recipe’s range for our bakes as we (me) really like the chewy/soft texture in our cookies.
This is another great feature of stuffed cookies as the fillings featured here almost always guarantee a soft chewy layer in the middle, even if you slightly overcook the outside and it gets a bit more firm than you like.
How long does stuffed cookies last?
Depending on the stuffing, most stuffed cookies will last about the same time as regular, homemade cookies (2-3 weeks in an airtight container, but I honestly don’t think we’ve ever had ANY cookie last that long in our home without being completely devoured).
