Super Fun Stuffed Hot Chocolate and Marshmallow Cookies

I’ll probably eventually tire of trying new cookies (I mean, it is theoretically possible), but these stuffed chocolate and marshmallow cookies are not going to be that time. I’ve written plenty about my love of/lust for cookies over the years and my addiction to chocolate sandwich cookies (aka Oreos) has featured prominently in these ramblings. Imagine my joy at discovering this homemade chocolate marshmallow fluff cookie recipe that mimics many of my favourite aspects of the classic sandwich cookie! The semisweet bitterness of the hot chocolate cookies combined with the sweetness of marshmallow fluff centre makes them dessert perfection for a cookie junkie like me!

While fairly straightforward in their creation, these chocolate cookies with marshmallow centres leave you lots of room to tinker too:

  • Prefer a dark chocolate flavour? Pick a more cocoa-based hot chocolate mix.
  • Choose a hot chocolate mix with mini marshmallows in it already if you are a marshmallow lover and want even more gooeyness to go around.
  • And with all the specialty hot chocolate mixes out there – white hot chocolate, mint hot chocolate, salted caramel, ‘Turtles’…
  • you are only limited by your imagination (and ability to consume all of your experiments before you make more)!

The chocolate chips are listed as optional, but I would advise that you select that option for inclusion. No dessert is ever made worse by the addition of chocolate chips!

They give the chocolate cookie outside layers more flavour depth and balance the sugary marshmallow fluff sandwich centre perfectly. They also give you more options for recipe alchemy in that you can customize them for the hot chocolate flavour you are using too.

Or go against expectations:

  • white chocolate chips in dark hot chocolate,
  • candy-covered chips in a sophisticated rich hot chocolate,
  • caramel chips in a white hot chocolate.
  • You get the idea… and probably also an urge to try them all.

Recipe Notes for how to make chocolate marshmallow cookies…

  • When piping the frosting, you can use either a regular piping bag with a large tip or a large Ziploc bag with the corner cut off.
  • It is important to give the cookies time to cool because the marshmallow frosting is a little temperamental. You don’t want the marshmallow fluff to get too warm and run off the cookies.
  • If you are not going to serve your cookies immediately, they should be stored in the fridge until they are ready to eat.
  • You can store your cookies in the fridge for up to 5 days. Either leave them on the baking sheet and cover them with plastic wrap or transfer them to an airtight container.
  • You can use either light or dark brown sugar in this recipe. You won’t notice much of a flavor difference either way. Likewise, you can use your favorite kind of hot cocoa mix in this recipe.
  • The chocolate chips are optional, but I like the extra chocolate flavor and gooeyness they bring to the whoopie pies.

Stuffed Hot Chocolate and Marshmallow Cookies

  • 1/2 cup salted butter
  • 1/2 cup brown sugar
  • 1/2 cup white granulated sugar
  • 2 large eggs
  • 1/4 cup hot cocoa mix
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips

Ingredients (frosting):

Equipment:

  • Electric hand mixer
  • Large mixing bowl
  • Baking sheet
  • Cooling rack
  • Piping bag or Ziploc bag

Preheat the oven to 350°F.

In a large bowl, cream the butter and sugars together using an electric hand mixer.

Once the butter and sugar are homogenous, whisk in the eggs until they are fully incorporated.

Add the baking soda, hot cocoa mix, and flour to the mixing bowl.

Reduce the hand mixer to a low speed and gently mix in the dry ingredients.

Make sure that no clumps of dry flour or hot cocoa mix remain unincorporated.

Divide the cookie dough into 20 evenly shaped balls and bake them 8 at a time for 14 minutes.
Allow the cookies to cool for at least 30 minutes.

While the cookies are cooking, whisk the marshmallow fluff, water, and powdered sugar together in a large bowl with an electric hand mixer
