This stuffed Smores chocolate chip cookie recipe brings all the taste but leaves behind the mess of the gooey campfire classic. Sure, sometimes that mess is part of the fun. I love roasting marshmallows and sandwiching them between graham crackers and chocolate as much as the next person – I’m not a s’more hater (s’mhater?).

Ingredients:

  • ½ cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • ½ tsp. baking powder
  • 1 tsp baking soda
  • 3 cups all-purpose flour

Directions:

Preheat the oven to 350 degrees Fahrenheit while you prepare the cookie dough.

In a large mixing bowl, beat together the salted butter, white sugar, and brown sugar
until the mixture is smooth and creamy.

Smores Cookies Frequently Asked Questions

What kind of chocolate do you use for smores?

Typically milk chocolate is best, but dark chocolate works too (especially if you find marshmallows too sweet). Remember, good s’mores have the marshmallow carmelize a little bit and this can add a little bitterness too (the good, Maillard effect type!).
White Chocolate should likely be avoided as it is (for most folks) too similar in taste to the marshmallow, so doesn’t provide the classic s’more flavour most people are looking for.

What makes a cookie chewy instead of crunchy?

Most often it is how long you bake cookies make them chewy or crunchy.
Most cookies we make come out chewy at around 10-12 minutes (they will often still look slightly uncooked in the middles when you remove them from the oven. Because of this, they will need to sit on the cookie sheet for a few minutes to set before removing them to a cooling rack.
