We’ve got another delicious and easy sheet pan meal for you: a baked chicken with onions and bell peppers recipe that will please fans of both spicy food and less-bold flavours alike. The chicken cooks bone-in and skin-on, which is both more affordable and flavourful. The skin gives them a crispy outside and a juicy interior, the oven-roasted peppers and onions compliment it perfectly and the jalapenos bring the spicy kick (if you want).

We’ve listed the virtues of easy sheet pan meals before:

  • fast prep,
  • fewer dishes to clean up,
  • they look great,
  • they taste great, we could go on (and have).

Today’s recipe is no exception. All the same great features, with a Southwestern-influenced drizzle, all ready in a little more than half an hour. Serve with some corn on the cob, beans and rice, or shred the chicken and you have the most spectacular taco or burrito fillings, all in one place.

So fire this up soon. And remember to bring the sheet pan to the table when you serve. These oven-roasted meals look so good, that you want to make sure everyone gets a chance to appreciate its glory before it disappears!

If you’re in a real big rush, we’ve learned a trick. You can save time by chopping less: these tiny peppers have very few seeds and you can roast them in one piece!

If you have folks around your table who don’t love the heat of jalapenos, you can still use this recipe – just cut the jalapenos in half and leave them to the side. Fans of heat can choose extra, and milder flavour loving people can leave them off their plates.

If that’s not enough separation you can get a divided sheet pan and keep the jalapenos completely away from the rest.
