Yields: 2 parfaits

Ingredients:

  • 1 1/2 cup Greek yogurt
  • 3/4 cup berry jam – red looks festive so try raspberry or strawberry
  • 2 Swiss rolls, thinly sliced
  • Garnish: sugared cranberries, mint, rosemary (Here’s my friend Lynns advice on how to make sugared cranberries.)

Instructions:

Line the bottom and sides of 2 medium sized glass cups with sliced Swiss rolls.

Pack lightly.

Add two heaping tablespoons of Greek yogurt to bottom of cup (on top of the sliced Swiss roll at bottom of cup).

Layer a heaping tablespoon of jam on top of the yogurt and spread to sides of the cup.

Fill the cup with yogurt, leaving half an inch at the top of the cup.

Layer 1/4 inch of jam on top of yogurt, spreading evenly over the yogurt.
