One of the many joys of Christmas morning (or, really, any holiday centered even a little bit around eating), is planning menus that aren’t exactly ‘healthy’. Things we would never do for a normal breakfast: eat a mountain of bacon and eggs, chase pancakes with cinnamon rolls, eat cookies dunked in Bailey’s coffee (or all of the above) are suddenly very fine to do because ‘it’s a holiday’.
As long as you brush your teeth with a candy cane afterwards, it’s all good.
But wouldn’t it be cool if you could take something that on the surface looks like a treat and pack it with some nutrition? Something that tastes awesome, fills you up but doesn’t leave you with a food coma/hangover by lunchtime? Enter this 5-minute Christmas Parfait recipe.
It looks gorgeous too! Spirals of the Swiss roll say, “Hey – Look at me all chocolate-stained-glass on the sides of this cup. I’m basically dessert!”. But the layers of high-protein Greek yogurt and jam (easily substituted for low-sugar fruit spread if you want to go even healthier) mean that this treat packs a well balanced and nutritious punch.
Add in the fact that this whole gorgeous dish can come together in less than 5 minutes and we are really talking a breakfast triple threat.

Festive 5-Minute Christmas Parfait Recipe
Prep time: 5 minutes
Yields: 2 parfaits
Ingredients:
- 1 1/2 cup Greek yogurt
- 3/4 cup berry jam – red looks festive so try raspberry or strawberry
- 2 Swiss rolls, thinly sliced
- Garnish: sugared cranberries, mint, rosemary (Here’s my friend Lynns advice on how to make sugared cranberries.)

Ingredients
- 1 1/2 cup greek yogurt
- 3/4 cup berry jam – red looks festive so try raspberry or strawberry
- 2 Swiss rolls, thinly sliced
- Garnish: sugared cranberries, mint, rosemary
Instructions
- Line the bottom and sides of 2 medium sized glass cups with sliced Swiss rolls. Pack lightly.
- Add two heaping tablespoons of Greek yogurt to bottom of cup (on top of the sliced Swiss roll at bottom of cup)
- Layer a heaping tablespoon of jam on top of the yogurt and spread to sides of the cup.
- Fill the cup with yogurt, leaving half an inch at the top of the cup.
- Layer 1/4 inch of jam on top of yogurt, spreading evenly over the yogurt.
- Dollop 3 tablespoons of yogurt on top of the jam.
- Decorate with sugared cranberries and mint or rosemary for an easy yet elegant festive dessert.
- Serve cold and enjoy!
